Jamie Oliver’s Chicken and Mushroom Pie 🍗🥧
This pie always reminds me of those comforting family dinners when everyone gathers round the table, eager for seconds. It’s creamy, savoury, and wrapped in golden puff pastry—what more could you ask for on a chilly evening? 😋💛
Ingredients:
* 500g boneless, skinless chicken thighs
* 1 tablespoon olive oil
* 1 bunch spring onions, sliced
* 320g mixed mushrooms, sliced
* 320g ready-rolled puff pastry
* 600ml semi-skimmed milk
* 1 tablespoon plain flour
* 1 tablespoon wholegrain mustard
* 80g mixed greens (watercress, spinach, rocket)
Instructions:
1. Preheat the oven to 200°C (180°C fan) or 400°F.
2. Cut the chicken into bite-sized chunks. Heat the olive oil in a large pan and cook the chicken, spring onions, and mushrooms for about 10 minutes, stirring occasionally, until the chicken is cooked through.
3. Unroll the puff pastry on a baking sheet, keeping it on the baking paper. Score a 3cm border around the edge and lightly mark a criss-cross in the middle. Brush with a bit of milk and bake for 17 minutes until golden and puffed.
4. Sprinkle the flour over the chicken mixture and stir it in. Gradually add the milk, stirring constantly to create a creamy sauce. Simmer until slightly thickened.
5. Remove from the heat and mix in the mustard and half of the greens. Season with salt and pepper to taste.
6. Once the pastry has cooled slightly, lift off the middle section, keeping the raised edges intact. Spoon the chicken mixture into the base, top with the remaining greens, and gently place the pastry lid back on.
7. Slice and serve warm with a simple side salad or extra greens.
