Easy keto breakfast inspiration.......
Chicken in curry sauce.....
Groundnut soup paired with eba
Recipe: Nigerian Groundnut Soup
Ingredients:
2 cups roasted groundnuts/peanuts, peeled
500g assorted meat or beef
Stockfish or dry fish, prawn (optional
2β3 tablespoons palm oil
1 medium onion, chopped
2β3 Scotch bonnet peppers, blended
1β2 tablespoons ground crayfish
2 seasoning cubes
Salt to taste
1 teaspoon ground uziza or black pepper, optional
4β5 cups meat stock or water
A handful of spinach, ugu, bitterleaf, or scent leaf
Method
Boil the meat with onion, seasoning cubes, salt, and enough water until tender. Add stockfish early if using it.
Blend the groundnuts into a smooth powder or paste. Add a little warm water if needed to help it blend.
Add palm oil to the cooked meat and stock, then add crayfish, pepper, and dry fish.
Stir in the groundnut paste gradually. Keep stirring so it does not form lumps.
Simmer for 15β25 minutes on low heat, stirring often. Add more water or stock if it becomes too thick.
Add vegetables near the end and cook for another 3β5 minutes.
Taste and adjust salt, pepper, or seasoning.
Tip
For a smoother soup, blend the roasted groundnuts with pepper and onion. For a deeper flavor, let the soup simmer until a little oil rises to the top.

Ingredients
2 cups almond flour
Β½ cup keto sweetener
2 tsp baking powder
ΒΌ tsp salt
4 eggs
Β½ cup melted butter
Β½ cup Greek yogurt or sour cream
1 tsp vanilla
ΒΎ cup chopped strawberries
Instruction:
Heat oven to 350Β°F / 175Β°C.
Mix dry ingredients.
Add eggs, butter, yogurt, and vanilla.
Fold in strawberries.
Bake 28β35 minutes.
Serve with whipped cream. cake.
