WHY PROPER DRYING MATTERS IN COFFEE

After harvesting and processing, coffee drying becomes one of the most critical stages in determining quality.

Proper drying helps preserve the bean’s flavor, aroma, and overall cup profile. Coffee that dries too quickly, too slowly, or unevenly can develop defects that reduce its market value.

For best results:
- Dry coffee evenly on raised drying tables
- Regularly turn the parchment for uniform drying
- Protect coffee from rain and excess moisture
- Avoid direct contact with soil or dirty surfaces

Well-dried coffee means better quality, stronger market competitiveness, and improved earnings for farmers.

Every stage matters when producing premium Kenyan coffee.

FROM TOMATOES TO TOP-TIER COFFEE MOVES — Violet is proof that the Coffee Revival is not just talk, it’s action.

After years in vegetable farming in Bungoma County, Violet took a bold leap into coffee farming through the Coffee Revival Programme and she’s already brewing change in her community.

With support from New KPCU through 300 certified coffee seedlings and agronomy support, she’s not only growing coffee, she’s growing opportunities for more women to join the value chain and secure sustainable income.

Women are no longer just part of the conversation in coffee; they are leading the revival.

At New KPCU, we’re committed to creating a coffee sector where women thrive, lead, and win. Because when women grow, communities grow too.

GREAT COFFEE BEGINS WITH CAREFUL HARVESTING

Because coffee cherries ripen at different times, selective hand-picking helps ensure only the best cherries are harvested; resulting in higher quality coffee, better cup profiles, and greater value for farmers.

Quality starts at the farm, and every carefully picked cherry counts.
