The lab processes beef, pork, lamb, and also make a variety of gourmet sausages. Come by the farm market to check out our products!
The Fresno State Meat Lab is completely student run and operated.The lab is a federally inspected meat processing facility that teaches students everything from food safety to harvesting, as well as further processing. All of our products can be found at the Fresno State Rue and Gwen Gibson Farm Market where they are sold year round. During the summer we open up our Bulldog Chop Shop providing quality fresh meat and sausage on Thursdays, Fridays and Saturdays from 7:30am -5:30pm.

Congratulations to our Meat Science Quiz Bowl team (Calie Doyle, Clayton Sneath, Maddy Henson, and Alex De Leon) who competed today at the Reciprocal Meat Conference in Columbus, Ohio against schools from across the country. The Bulldogs ended up 6th out of 35 teams. They were coached by Montse Perez-Valadez. This is a huge accomplishment and we are so proud of them! Go Bulldogs!

We had a blast at our 80s themed bowling with the Dairy Science Club last night! Some of us dressed as the 1980s 🪩🕺 and some of us dressed as the 1780s🦅🇺🇸! Congrats to team Founding Fathers for the highest bowling score and team Shake N Bake for best dressed! Thank you to everyone who came out and joined us!
