On an unexpected 60 degree day in January I unearthed a bed of gorgeous carrots. The frost increased their sugar and polyphenol content (a defense mechanism for their survival) making for some incredibly tasting root veggies. What did I do with some of them? It's a powerhouse of nutrition containing high amounts of magnesium, manganese, carotenoids, lutein and vitamins K, A and C. It's an essential vegetable to grow - easy to sow, provides a continual amount of leafy greens you can just cut as you need and then provides a beautiful root veggie you can store for weeks in the fridge. EASY ways to incorporate it in your diet: mixed with scrambled eggs in the morning, as component to your green juice and with dinner, sauteed with garlic as a side. Cutting the scape of the garlic ensures that energy will be used to make a larger garlic bulb and it's mild flavor can be used in anything which calls for garlic. Today was the biodynamic day for "root" during a waning phase of the moon (think energy drawing downwards into the earth). Energetically it ensures a more nutritious plant and will store for a longer period of time. Hook Mountain Growers
