With microgreens, it's all about nutritional density 🌱.
Current studies show that micro-stage vegetable plants can be anywhere from 6x - 40x denser in phytonutrient content (vs. mature vegetation) 🧬
The ~1 oz of Beet Microgreens shown here boasts more nutritional value than the whole bunch of (golden) beets behind it!

Peas, Cilantro, and Broccoli 🌱
Peas (Left) make an awesome base in salads, or go well just as a side-dish. They're exceptionally high in protein, folate, and amino acids.

Cilantro (Center) is an amazing garnish. Pairs well in tacos, on top of curries, in wraps, and much more. Concentrated in cilantro flavor - but not intense.

Broccoli (Right) should be everyone's favorite microgreen, and for good reason! It's packed in antioxidant content while being very palatable. Broccoli can easily be thrown into any recipe or munched on by itself.

Growing in vertical layers allows us to produce large quantities while utilizing minimal space. 🌱⬆️
Since they're harvested young, microgreens are way more susceptible to the elements than mature veg crops (Kale, Lettuce, Chard, etc) which are typically transplanted. 🥬
Being an indoor farm operation allows us to grow with full climate control - away from extreme heat/cold, bugs, debris, and everything else looking to harm our produce! 🐛🦗💨

Microgreens really do go well on almost everything 🌱🔪.
Every crop tastes slightly different, so the culinary possibilities are endless. This is one of our favorite recipes - because it’s simple 🔥.

Sunflower shoots are among our most popular crops 🌻. They're perfect in salads 🥙 and sandwiches 🥪, but they're also a go-to for smoothies🥤.
They're an EXCELLENT source of plant protein too 🌱
Our (unprocessed) sunflower shoots typically come with a fair amount of "Seed Hulls" (shown in image 2). These empty seed husks are 100% edible!🍴
The husks on these sunflower shoots naturally fall off once the plant has matured a bit. Luckily, they're easy to pick off if you don't like their taste / texture! 🤏🏽 They come off easily with a quick wash.

Loose teas are packaged as larger, whole pieces. 🍵🌿
Most herbs are known to retain more essential phytonutrients when stored in larger pieces vs. powder form. Brewing teas using loose herbs make for a more potent and nutritionally dense beverage. 🍵
Bagged teas typically contain powdered teas / herbs. They're great for making a quick cup - but are usually lower in flavanoid and nutritional value.

Healthy roots, healthy plants 🪴
Monitoring root health matters just as much as the foliage it produces.
Pictured here is a healthy root mass of (Speckled) Peas. They just take over 💯
Every plant has its own unique root structure (length, size, etc). By studying each plant's specific needs, we're able to give it the optimal substrate (organic soil blend) it needs to thrive 🌱.

What happens to all that soil and leftover plant matter once a tray is harvested? 🔪🌱
Compost! Everything leftover after harvest (soil, rootmass, plant stalks, seed hulls) gets thrown into our massive compost pile. 🧺
After a few months, it'll make the perfect addition to any outdoor garden. 🌿🌷
Composted soil is never re-used for indoor production - only outdoor use.
Produce grown on our farm always start with new seed and fresh soil 🌱

Drought and Water Conservation 💧 are two serious problems for farmers (and everyone else) in the Pacific Northwest this season.
Farms are under immense pressure to conserve water wherever possible. For many, this is proving to be a difficult task.
Being an indoor farm, we're able to fully control our growing environment year-round - resulting in a highly predictable watering schedule. Our goal at Etum is to minimize, and eventually, eliminate water waste. 🚿💚
Crops are monitored several times daily and watered by hand 🌱👋🏾
