Lion’s Mane (Hericium erinaceus).
Looks like a white sea sponge, grows on old hardwood, and produces compounds that support nerve growth factor.
I grow it here on Tassie oak and soy pellets aka. masters mix. Fresh it has a mild crab-like flavour. Dried and powdered it’s neutral and easy to add to coffee or food.

Grifola frondosa, maitake or dancing mushroom in Japan.
First ever flush feeling quiet proud and to have my fruiting container dialed in for these beautiful mushrooms is a personal achievement.
