A classic Roman variety of Italian chicory with crisp hollow stems, jagged leaves, and a pleasantly bitter finish - somewhere between endive and dandelion greens.

Traditionally used in puntarelle alla romana, where the inner shoots are finely sliced, soaked in ice water to curl, then dressed with a combination of anchovy, garlic, olive oil, and vinegar or lemon juice. Excellent raw, grilled, or alongside rich winter dishes.
