Cinnamon Brioche with Ricotta, Banana & Honey
Ingredients
β
25g butter (to spread) 25 grams butter (to spread)
β
4 bananas, sliced 4 bananas, sliced
β
1 tbs cinnamon sugar (sprinkled) 1 tablespoon cinnamon sugar (sprinkled)
β
1 tbs honey 1 tablespoon honey
β
2 tbs low fat ricotta 2 tablespoon low fat ricotta
β
1 loaf brioche
Method
β‘οΈ Slice the brioche thickly and toast until golden.
β‘οΈ Spread each slice with a little butter and sprinkle with cinnamon sugar.
β‘οΈ Top with ricotta and banana.
β‘οΈ Drizzle with honey and serve warm.

Hosting a brunch but running out of ideas? Try this quick and easy Mandarin Rice Paper Rolls
Ingredients
β
100g vermicelli noodles 100 grams vermicelli noodles

3 cup cooked chicken, shredded 3 cup cooked chicken, shredded

150g rice paper 150 grams rice paper

1 carrot, peeled, coarsely grated 1 carrot, peeled, coarsely grated

1 small red chilli, thinly sliced 1 small red chilli, thinly sliced

1 Lebanese cucumber, cut into long matchsticks 1 Lebanese cucumber, cut into long matchsticks

2 mandarins, peeled, segmented, cut in half lengthways 2 mandarins, peeled, segmented, cut in half lengthways

2 tbs rice wine vinegar 2 tablespoon rice wine vinegar
β
1/2 cup hoisin sauce 1 half cup hoisin sauce
β
1 tbs salted peanuts, finely chopped 1 tablespoon salted peanuts, finely chopped
Method
β‘οΈ Combine hoisin sauce, vinegar and water in a bowl. Transfer to a serving bowl. Top with peanuts and chilli.
β‘οΈ Place noodles in a bowl and cover with boiling water. Stand for 5 minutes or until softened. Drain well. Fill a large bowl with warm water. Using one sheet of rice paper at a time, dip into water for 10-20 seconds or until slightly softened. Place on a flat surface. Place 2 coriander leaves on middle of rice paper. Top with noodles, chicken, carrot, mandarin and cucumber. Fold the side closest to you over filling. Fold sides over towards centre and roll up, enclosing filling. Place on a platter. Repeat with remaining sheets and filling to make 15 in total. Serve with the sauce.

Grab a fork and a napkin, because today we celebrate Apple Pie Day! Talk about a holiday you can really sink your teeth into!
Apple pie has been around since the middle ages. A Dutch cookbook dated 1514 lists a recipe for Appeltaerten. It called for a standard pie crust, slices of soft seedless apples, and a few tasty spicesβspecifically cardamom, ginger, cinnamon, nutmeg, clove, mace, and sugarβall cooked up in a traditional Dutch oven. The English also had their version of apple pie, which dates back to the time of Chaucer. The English version also suggests adding figs, raisins, and pears to the apple-and-spice mixture. In Sweden, apple crumble was the gold-standard. Traditional Swedish apple crumble requires breadcrumbs or rolled oats instead of pastry, and is served up with custard or ice cream. In France, apple pie is served upside-down as a tarte tatin.

Pear & Walnut Tarts
Ingredients
β
1/2 cup thickened cream (to serve) 1 half cup thickened cream (to serve)
β
2 sheet puff pastry , just thawed 2 sheet puff pastry , just thawed

60g butter 60 grams butter
β
2 large Packham pears, peeled, cored and cut into wedges 2 large Packham pears, peeled, cored and cut into wedges

1/2 tsp cinnamon 1 half teaspoon cinnamon
β
2 tbs honey 2 tablespoon honey
β
100g walnuts 100 grams walnuts
Method
β‘οΈ Preheat oven to 200Β°C.
β‘οΈ Line a baking tray with baking paper.
β‘οΈ Cut each sheet of pastry into 4 squares.
β‘οΈ Place 4 squares onto baking tray and top with the remaining 4 squares.
β‘οΈ Heat butter in a frying pan. Add cinnamon and walnuts and toss until walnuts are golden. Remove from pan.
β‘οΈ Add pear wedges and fry until tender and golden.
β‘οΈ Arrange pear slices and walnuts on the pastry squares and drizzle with honey. Bake for 20-25 minutes until pastry is puffed and golden.
β‘οΈ Serve with a dollop of thickened cream.

National Orange Juice Day π is celebrated on May 4 every year. This is a lighthearted day set aside to recognize how vital a glass of OJ is to have on breakfast tables. Orange juice is the extract or juice of oranges and there are as many different types of orange juice as there are types of oranges. Orange juice may or may not have bits of fruit in it, and is classified as orange juice with pulp and orange juice without pulp.
There is no other best way to celebrate today but to have a glass or two and share with friends or family! ππ

Prawn, Mango & Watercress Salad
Ingredients
β
1kg green prawns, peeled, deveined, tail intact
β
3 tsp fish sauce
β
1 long red chilli, deseeded, finely chopped
β
1/4 cup coriander leaves, finely chopped
β
2 coriander sprigs (to serve)
β
2 medium mangoes, cheeks removed, diced
β
1 small red onion, halved lengthways, thinly sliced
β
1 bunch watercress, sprigs removed
β
1/4 cup fresh lime juice
β
1 tsp caster sugar
β
1/3 cup vegetable oil
Method
β‘οΈ Combine oil, lime juice, fish sauce, sugar, coriander and chilli in a jug.
β‘οΈ Heat a BBQ hot plate on medium-high heat. Spray cooking oil over the hot plate and cook prawns on BBQ plate for 2 minutes each side or until golden and just cooked through. Transfer to a plate and cover with foil to keep warm.
β‘οΈ Combine watercress, onion, mango, and prawns in a large bowl.
β‘οΈ Add dressing and toss until well combined. Transfer to a serving platter. Top salad with coriander sprigs to serve.
