Pecorino Romano PDO is a hard-cooked cheese, produced in central Italy with whole sheep’s milk from pasture-grazing herds raised in the wild, on natural pastures. This cheese is nowadays the most important sheep’s milk cheese among the EU Protected Designation of Origin products.
The aroma is characteristic and the cheese has an fragrant and slightly piquant flavor. The more mature cheese to grate has a piquant, intense and pleasing flavor. Pecorino Romano PDO is characterized by the absence of lactose and galactose and the presence of unsaturated and polyunsaturated fatty acids. It is also rich in calcium and phosphorus.

Provolone Valpadana PDO is a semi-hard whole cow’s milk cheese with a smooth rind. It’s produced in Northern Italy and it can be enjoyed in the typologies Dolce or Piccante.
Provolone Valpadana PDO comes in a variety of forms and may be shaped like a salami, a melon, a cone or a pear; it may also have a spherical k**b on the top. It can be produced in two typologies: Dolce (mild) and Piccante (strong). Provolone Valpadana PDO has a thin and smooth rind that varies in color from yellow to golden or brownish.
