What are Orange-Fleshed Sweet Potatoes (OFSP)?

Orange-Fleshed Sweet Potatoes are a special variety of sweet potatoes rich in beta-carotene, a natural pigment the body converts into vitamin A. Unlike regular white or yellow-fleshed sweet potatoes, OFSP have a vibrant orange interior and are specifically bred to help combat vitamin A deficiency.
