Navratri fasting has its own familiar flavours, and there’s plenty you can make with simple ingredients from the pantry. Cholai, puffed amaranth and roasted Pahadi Til can all find their way into fasting meals and snacks. Add a little of our Chaat Masala, made with rock salt, for that extra bit of flavour. Some ingredients don’t need much to make a dish better. A little til can add a lovely nuttiness to chutneys, sabzi and even a simple bowl of dal. Its nutty flavour also makes a delicious tahini for hummus and babaganoush. It’s one of those everyday ingredients that has always had a place in Kumaoni kitchens, and one we’re happy to bring to more kitchens today.

Every year, around this time, Kumaon lights a fire. Khatadwa (खतड़वा) is an old Kumaoni folk festival that marks the changing of seasons, a time when communities come together as the monsoon gives way to autumn and winter. For generations, life in the mountains has followed these seasonal rhythms. But today, those rhythms are changing. Rainfall is becoming more unpredictable, winters are warmer, water sources are under pressure, and the forests are changing too. Khatadwa (खतड़वा) is one of those traditions that keeps us connected to the seasons, and perhaps makes us notice how different they are becoming.
