African cake; Chikondamoyo aka chigumu

Chikondamoyo our beloved traditional snack is not only delicious but also versatile and nutritious. While, the classic recipe of maize flour, water and baking soda is a staple, there are countless ways to elevate the flavour and nutritional profile without compromising its unique taste and affordability.

By incorporating mashed bananas, milk and eggs to our recipe, we amplified the sweetness, vitamin profile as well as the flavour.

What other ingredients do you typically add to your chikondamoyo?

Tiny but mighty, quail eggs are a nutrient powerhouse!

Despite their small size, these eggs are packed with an impressive array of nutrients that rival, and in some cases surpass those of the larger and more common chicken egg.

Quail eggs are not just cute and tiny as you may see, they are rich in high-quality protein, boast double the vitamin B12 content compared to chicken eggs. They're also loaded with essential minerals and vitamins.

One unique feature of quail eggs is their high concentration of antioxidants, which play a vital role in supporting overall health and well-being.

We quantified quail eggs in our lab, it takes atleast three or four quail eggs to match the size and quantity of a single chicken egg.

How do you typically cook your quail eggs? Boiled, poached, flied or scrambled?
