Pavlova Ingredients: 6 medium egg white (room temperature ) 1/4 tsp (2g) salt 1 1/2 cups (300g) superfine sugar 1 1/4 tsp (5g)white vinegar 1 tbsp (9 g) cornstarch 1 tsp vanilla extract or fruit extract For Frosting: 2 cups heavy whipping cream 1/2 cup powdered sugar Vanilla Instructions: Preheat the oven to 280F. Line two baking sheets with parchment paper and using a 7-inch spring cake bottom, draw two circles on the parchment paper. In a large bowl, whisk the egg whites and a pinch of salt for a minute. Then add the sugar a little at a time while continuing to whisk for 8-10 minutes until the meringue is stiff. IEvenly sprinkle the cornstarchch, vinegar and vanilla over the meringue using a wooden spoon and gently fold the mixture until just everything is incorporated. Divide the meringue equally into circles on the prepared baking sheets and bake for 1 hour and 15-20 min. Turn off the oven and let cool completely the meringue in the oven without opening the oven door. In the meantime, in a bowl, using an electric mixer or hand mixer, beat the cold cream, powdered sugar, and vanilla until a stiff peak forms. Once the pavlova cools completely, place a meringue round on a plate and spread some frosting and some filling. Top with other meringue round and spread the remaining frosting.
