Have you heard of the "Jumping Salad" as we call it in Cantilan?

You take shrimp that have just been captured and are still alive. You then add some chopped onion and tree cucumber, which is also quite sour, and salt and cucumber to taste. Calamansi, or Philippines lime juice, is then used as your souring and cooking agent.

Jumping Salad for breakfast is a winner!
