Fafião, a charming village located in the heart of the Peneda-Gerês National Park, has recently restored its historic communal olive press, bringing back to life a centuries-old tradition. Every year, the villagers gather to pick olives and bring them to the press, which now operates thanks to the natural energy from a nearby stream. This olive oil production process is a testament to the region's rich agricultural heritage.

-Grinding the olives: Water flows through a waterwheel, turning a large stone that grinds the olives into a paste.

-Pressing the paste: The paste is then placed into woven baskets, over which hot water is poured to help extract the oil.

-Extraction of olive oil: A log with a screw mechanism presses down on the baskets, naturally separating the oil from the water.

-Community involvement: The press is communitarian, meaning anyone in Fafião can use it, contributing 25% of their oil to the village’s communal fund.

This tradition not only preserves an important cultural heritage but also strengthens community bonds, with the extracted oil being auctioned off to support local events, such as the Festa de Santiago. It’s a unique opportunity to discover the culture and tradition of Fafião!
