How one divisive herb became an essential part of Thai cooking
Why coriander is an essential part of Thai cooking ?

It’s the middle of dinner service at Bo.lan restaurant in Bangkok, where a traditional Thai meal showcases coriander in every form. The leaves add brightness to stir-fried jícama and dried prawns, while the stems, seeds and roots flavour other dishes.

When asked if he can make an entire Thai meal without coriander, chef Dylan Eitharong shakes his head. “It’s not possible. It’s in everything.”

Though now integral to Thai cuisine, coriander originated in the Mediterranean and Middle East and arrived in Thailand with European traders, much like chillies.

“Coriander roots add savoury to dishes and bind the flavour in pastes,” says Bo.lan’s chef, Bo Songvisava. “The seeds impart a deeper, earthier flavour, while the leaves add fragrance and freshness.” The stems are useful in stocks and soups, too.

Coriander is also central to Mexican cuisine. At Bangkok’s Delia restaurant, chef Gabriela Espinosa uses the leaves, stems and toasted seeds, and has adopted Thailand’s use of coriander root in broths.

Yet even fans of the herb have limits. “Coriander on massaman curry is a crime against humanity,” says Eitharong. “It just needs to be there when freshness is needed.”

“Thais can’t live without coriander,” says Blue Elephant’s chef, Nooror Somany Steppe. For Thais abroad, she adds, picking up a bunch of fresh coriander is “just a taste of home.”

🍯 The Art of “Chueam” — One Sweet Technique, Many Thai Desserts

Thai desserts are defined not only by their ingredients, but also by the techniques used to transform them. One traditional method is “Chueam”, slowly cooking ingredients in sugar syrup until they become tender, sweet and beautifully glossy. ✨

Although the process may seem simple, good Chueam requires careful control of heat, time and texture. The goal is not simply to add sweetness, but to allow the syrup to gradually pe*****te the ingredient as it softens without losing its shape or distinctive character.

From fruits to root vegetables, the Chueam technique can create remarkably different textures. Bananas become tender and fragrant, cassava softens and turns slightly translucent, taro becomes smooth and creamy, while firm durian develops a dense and pleasantly chewy texture.

[ ✨ What Makes a Good “Chueam” ? ]

A well-made Chueam dessert should be tender, but not mushy. The ingredient should soften while still retaining its natural form.

🍯 Evenly Sweet — Slow cooking allows the syrup to gradually infuse the ingredient rather than simply coating the surface.

💎 Glossy Appearance — As the syrup becomes more concentrated, it gives Chueam desserts their characteristic smooth and glossy finish.

🥥 Many Chueam sweets are also served with lightly salted coconut cream, creating a classic Thai balance of sweetness, richness and a subtle savoury note.

[ Five Famous Thai Desserts Made with Chueam ]

🍌 Kluai Chueam — Bananas in Syrup

Firm bananas are gently simmered in sugar syrup until tender, glossy and infused with sweetness while still holding their shape. Often served with lightly salted coconut cream, Kluai Chueam combines soft, fragrant fruit with creamy richness and a subtle salty contrast.

🌿 Man Sampalang Chueam — Cassava in Syrup

In Man Sampalang Chueam, cassava is slowly cooked until its dense, starchy flesh becomes soft and slightly translucent. Its almost creamy texture pairs especially well with salted coconut cream, which balances the sweetness while adding richness. 🥥

🍠 Phueak Chueam — Taro in Syrup

Taro offers a different expression of the same technique. As it slowly absorbs the syrup, Phueak Chueam becomes tender and creamy while retaining enough structure to hold its shape. Its mild, starchy character creates a mellow sweetness quite different from fruit-based Chueam desserts.

👑 Durian Chueam — Durian in Syrup

Unlike the soft, custard-like flesh of ripe durian, Durian Chueam is generally prepared with firm or unripe durian that can withstand prolonged cooking without becoming mushy.

The Chueam process transforms the fruit into something denser, firmer and pleasantly chewy — revealing an entirely different side of Thailand’s famous “King of Fruits.” 👑

🌿 Malako San Rang Taen — Intricately Woven Papaya in Syrup

Perhaps one of the most visually impressive examples is Malako San Rang Taen. Unripe papaya is carefully cut with alternating incisions on opposite sides, then gently stretched open to create an intricate, lattice-like form. The name “San Rang Taen” refers to its woven appearance, which resembles a wasp’s nest.

The papaya is then slowly cooked in syrup until sweet, glossy and slightly translucent while maintaining a pleasantly firm texture and its delicate form.

[ 🍯 One Technique, Many Transformations ]

What makes Chueam fascinating is that it is not a single dessert, but a culinary technique capable of transforming many different ingredients.

The ingredients may vary, yet the principle remains the same: sugar syrup, controlled heat and time working together to create new flavours and textures.

In Thai dessert-making, sweetness is only part of the story. The true artistry lies in using heat, time and syrup to transform an ingredient while preserving its distinctive character.

From humble roots to tropical fruits, one technique can create an entire world of Thai desserts. 🇹🇭🍯

Khao Niao Mun — Discover Four Traditional Thai Toppings 🥥🍚

Soft, chewy and fragrant with coconut, Khao Niao Mun is a traditional Thai sweet made from steamed glutinous rice mixed with coconut milk, sugar and a touch of salt.

While many people may recognise coconut sticky rice through its pairing with ripe mango, Thai cuisine also serves it with a variety of traditional toppings — ranging from creamy egg custard to sweet-savoury shrimp and dried fish.

The key lies in a technique called “mun.” After the glutinous rice is soaked and steamed, the hot rice is mixed with seasoned coconut milk and left to rest until the grains absorb the mixture. The result is glossy, tender sticky rice with a rich coconut aroma and a gentle balance of sweetness and saltiness.

🍮 Khao Niao Sangkhaya (Coconut Sticky Rice with Thai Egg Custard)

Khao Niao Sangkhaya pairs coconut sticky rice with soft Thai egg custard made from eggs, coconut milk and sugar. The smooth, creamy custard contrasts with the chewy rice, creating one of the most familiar and comforting combinations in traditional Thai sweets.

🍤 Khao Niao Na Goong (Coconut Sticky Rice with Sweet-Savoury Shrimp Topping)

Khao Niao Na Goong offers a distinctive balance of flavours. Shrimp and grated coconut are cooked with seasonings to create a fragrant topping that is both sweet and savoury. Its richness pairs naturally with the lightly salted coconut sticky rice underneath.

The combination reflects the Thai culinary tradition of allowing sweet and savoury flavours to exist together within the same dish.

🐟 Khao Niao Na Pla Haeng (Coconut Sticky Rice with Dried Fish Topping)

For Khao Niao Na Pla Haeng, dried fish is pounded or flaked until fluffy, then cooked and combined with sugar and crisp fried shallots. The savouriness of the fish is softened by sweetness, while fried shallots add fragrance and texture. Served over coconut sticky rice, it becomes a delicate balance of sweet, salty and aromatic flavours.

🥥 Khao Niao Na Krachik (Coconut Sticky Rice with Caramelised Coconut Topping)

Khao Niao Na Krachik celebrates coconut in two different forms. Shredded coconut is slowly cooked with palm or coconut sugar until glossy, chewy and deeply fragrant, creating a caramel-like sweetness that complements the coconut-rich sticky rice.

🐷 One Crunch, Two Dips — Discover Northern Thai Nam Phrik & Khaep Mu 🌶️

Northern Thai cuisine is full of contrasts — soft sticky rice, fresh and cooked vegetables, intensely flavoured chilli dips and crisp accompaniments. One of its most satisfying combinations is Khaep Mu (Northern Thai crispy pork rind) with Nam Phrik (Thai Chilli Dips).

Two of the best-known Northern Thai chilli dips are Nam Phrik Ong, a red-orange tomato-and-pork dip, and Nam Phrik Num, a rustic green chilli dip made from roasted chillies. Different in colour, flavour and preparation, both pair naturally with golden Khaep Mu.

[ 🐷 What is Khaep Mu ? ]

Khaep Mu is Northern Thai crispy pork rind, made from prepared pork skin that is fried until golden, puffed and crisp. It is commonly served with Nam Phrik, where its brittle crunch contrasts with the softer, thicker texture of the dip.

Two familiar styles are Khaep Mu Tit Man, which retains a layer of fat for a richer flavour and denser bite, and Khaep Mu Rai Man, made primarily from pork skin for a more airy, brittle and distinctly crisp texture.

One brings extra richness; the other lets the crunch take centre stage.

[ 🔴 Red vs 🟢 Green: Two Northern Thai Chilli Dips ]

Place Nam Phrik Ong and Nam Phrik Num side by side and the contrast is clear.

🔴Nam Phrik Ong is red-orange, moist and meaty. Made with tomatoes, minced pork and chilli paste, it is cooked in a pan until the tomatoes soften into the pork. The result is coarse and juicy, with savoury richness, tomato brightness and usually mild to moderate chilli heat, depending on the recipe.

🟢Nam Phrik Num, meanwhile, is built around green chillies, shallots and garlic roasted over fire before being pounded together. Roasting gives it its defining smoky aroma, while pounding preserves a thick, coarse and slightly fibrous texture. Its flavour is smoky, rustic and distinctly chilli-forward, with a level of heat that varies according to the chillies and the recipe.

[ 🍚 A Classic Northern Thai Way of Eating ]
🐷🍅 Khaep Mu × Nam Phrik Ong — Crunch Meets Rich and Juicy

With Nam Phrik Ong, the dry crunch of Khaep Mu meets the soft, chunky texture of pork and tomato.

The pairing works through contrast: crisp against soft, dry against juicy, and rich pork against bright tomato tanginess.

Rather than feeling like a separate snack, Khaep Mu becomes a natural partner to the dip, adding both texture and another layer of savoury pork flavour.

🐷🌶️ Khaep Mu × Nam Phrik Num — Crunch Meets Smoky Heat

With Nam Phrik Num, the experience changes.

The thick chilli dip clings to the rough surface of Khaep Mu, carrying roasted green chilli, shallot and garlic into every bite. The pork rind adds a light, brittle crunch and savoury richness that balances the smoky chilli heat.

Where Nam Phrik Ong creates a rich and juicy pairing, Nam Phrik Num brings something smokier, sharper and more aromatic.

One crunch. Two very different personalities.

🍅 Nam Phrik Ong brings tomato richness.
🌶️ Nam Phrik Num brings smoky chilli heat.
🐷 Khaep Mu brings the crunch.

Together, they show how Northern Thai cuisine creates remarkable variety through the balance of flavour and texture — one crunch, two dips, and many satisfying bites.

Phrik Gaeng: Seven Pastes Behind Thai Curries 🇹🇭🌶️Thai curries are often recognised by their colours — red, green, yello...

Phrik Gaeng: Seven Pastes Behind Thai Curries 🇹🇭🌶️

Thai curries are often recognised by their colours — red, green, yellow or deep orange — but their true identity begins with phrik gaeng, or Thai curry paste.

Traditionally pounded from a combination of chillies, herbs, aromatics and spices, Thai curry pastes may include ingredients such as garlic, shallots, lemongrass, galangal, coriander root, kaffir lime peel, pepper and fermented shrimp paste. Each paste has its own distinctive composition and balance.

** 🌶️⭐ Heat levels may vary according to the type and quantity of chillies used, regional variations, individual recipes and the cook. Any spice-rating scale should therefore be understood as a general comparison rather than a fixed measurement.

1. Phrik Gaeng Phet — Red Curry Paste 🌶️
🌶️🌶️🌶️🌶️ | Dried Red Chillies | Deeply Aromatic, Savoury & Robust

Phrik Gaeng Phet, or Red Curry Paste, is made with dried red chillies and Thai aromatics such as lemongrass, galangal, garlic, shallots and kaffir lime peel. It has a deep, aromatic and savoury flavour.

Usually cooked with coconut milk, it forms the base of dishes such as Gaeng Phet Ped Yang, or Red Curry with Roasted Duck. A similar paste is also used in Hor Mok Pla, a steamed fish curry custard.

2. Phrik Gaeng Khiao Wan — Green Curry Paste 🌿🌶️
🌶️🌶️🌶️🌶️ | Fresh Green Chillies | Fresh, Vibrant & Herbaceous

Phrik Gaeng Khiao Wan, or Green Curry Paste, is defined by fresh green chillies combined with lemongrass, galangal, kaffir lime peel, garlic, shallots and coriander root. This creates a fresh, vibrant and herbaceous flavour.

Cooked with coconut milk, it forms Gaeng Khiao Wan G*i, or Green Curry with Chicken. Its fresh chilli character gives it a distinct personality, rather than simply making it a green version of red curry.

3. Phrik Gaeng Panaeng — Panaeng Curry Paste 🥥
🌶️🌶️🌶️ | Dried Red Chillies | Rich, Nutty & Aromatic

Phrik Gaeng Panaeng, or Panaeng Curry Paste, combines dried red chillies with Thai aromatics and spices. Some recipes also include roasted peanuts. It produces a rich, nutty and aromatic flavour.

Panaeng is usually cooked into a thick coconut-based sauce that clings closely to the meat. Panaeng Moo, or Panaeng Curry with Pork, is a classic example, while the paste can also season dishes such as Panaeng Fried Rice.

4. Phrik Gaeng Massaman — Massaman Curry Paste 🥜🌶️
🌶️🌶️ | Dried Spur Chillies | Rich, Complex & Warmly Spiced

Phrik Gaeng Massaman, or Massaman Curry Paste is typically made with dried red spur chillies, combined with Thai aromatics and warming spices. Its flavour is rich, complex and fragrant, with a gentler heat than many chilli-forward curries.

Cooked with coconut milk, it creates a comforting curry often served with beef, potatoes, onions and peanuts. Gaeng Massaman Nuea, or Massaman Curry with Beef, is one of its best-known expressions.

5. Phrik Gaeng Kari — Yellow Curry Paste 💛
🌶️🌶️ | Dried Red Chillies | Mellow, Earthy & Warmly Spiced

Phrik Gaeng Kari, or Yellow Curry Paste, combines dried chillies and Thai aromatics with spices such as turmeric, cumin and coriander. Turmeric gives the paste and finished curry their characteristic golden colour, while the spices create an earthy fragrance and mellow flavour.

Usually cooked with coconut milk, it creates a smooth and comforting curry. Gaeng Kari G*i, or Thai Yellow Curry with Chicken, is a familiar example, while the paste can also be used in Thai Yellow Curry Fried Rice.

6. Phrik Gaeng Som — Sour Curry Paste 🍋🌶️
🌶️🌶️🌶️🌶️ | Dried Red Chillies | Sharp, Tangy & Bright

Phrik Gaeng Som, or Sour Curry Paste, offers a sharper alternative to coconut-based curries. The paste is typically built around chillies and aromatics, while the finished curry’s characteristic sourness usually comes from tamarind or other souring ingredients, depending on the regional recipe. This creates a bright, tangy broth with direct chilli heat.

Gaeng Som Pla, or Sour Curry with Fish, is a classic example. Another popular version is Gaeng Som Cha-Om Khai Goong, with acacia omelette and prawns, showing that Thai gaeng can be light and broth-based rather than thick or creamy.

7. Phrik Gaeng Pa — Jungle Curry Paste 🌿🌶️
🌶️🌶️🌶️🌶️🌶️ | Dried Red Chillies | Fiery, Herbal, Bold & Rustic

Phrik Gaeng Pa, or Jungle Curry Paste, is one of the most intensely flavoured styles. Made with dried red chillies and aromatic herbs, it is fiery, bold, herbal and rustic.

Traditionally water-based and made without coconut milk, Jungle Curry allows the chilli heat and herbs to remain direct. Gaeng Pa Nuea Sap, or Jungle Curry with Minced Beef, is a classic example, often accompanied by vegetables, fresh herbs and green peppercorns.
