I visited one of my happy places today restaurant depot! The pictures are the result of that trip I got 11 beautiful steaks out of that roast. And a couple of pounds of beef to grind up and plenty of fat to turn into tallow.

This went down this afternoon at the world headquarters of fern City BBQ I cooked a Picanha for a friend at work turned out fantastic because it's hers I could not cut it and show you how perfectly done to medium rare it was but trust me it came out marvelous

Okay Fern City BBQ was very busy today we did a remote cook. My friend Tom Shepard wanted some help cooking a whole hog. It was a suckling hog only 44 lb. It had been 40 years since I have cooked one so it was a learning experience for the both of us. It actually went very well here we go this is from start to finish enjoy the pictures.

It's been awhile since I posted. It's been very hot lately not conducive to cooking on the grill. But.....
A funny thing happened this afternoon in Winn-Dixie. I made a quick trip to the store to get a pound of sausage and a box of salt that's all. But as I walk past the meat case this bad boy jumped right out of the case and into my arms I couldn't resist! It's a bouncing baby brisket weighing in at 18 and a half pounds. On sale for 399 a pound.
I will certainly cook this thing up in the next few weeks stay tuned.

Yesterday morning I made a meatloaf and put it in the refrigerator to cook today. When I opened up the refrigerator that darn meatloaf had had babies there were three itty bitty meatloaves right beside the big one. So you guessed it I put them all on the Green Mountain Grill and smoked them up, enjoy.

Most of you don't know but I've been out of sorts since Wednesday minor medical issue. But I want to share what my family and friends have done for me. So Friday was July 4th which I usually cook but I wasn't feeling up to it. So I did make a little cream cheese with pepper jelly on it. And took some ribs out of the freezer to take to my sister Winnie's house where we had a very nice meal. But before that two of my sisters help me get fed during the week love them and appreciate what they did for me very much. Then today I had a very dear friend bring me sushi. And I made another cream cheese with Peach jelly with a touch of heat for us to share. For being under the weather it's been a great weekend. But guess what tomorrow we cook. I was in the kitchen today prepping for tomorrow stay tuned.

Sauced, pulled pork sandwich. Way back in the day a friend ate his with coleslaw and said I should try it. So, I did and liked it. You can't use just any coleslaw, it must be more tangy than sweet. How many of you put coleslaw slaw on pulled pork?
