Bastrop County has been on the map for some of the most legendary BBQ spots in Texas for centuries! Southside Market & Barbeque started its first brick-and-mortar in Elgin, TX in 1886, making it the oldest BBQ restaurant still in operation in the state!

And that’s not all… Elgin, TX earned the OFFICIAL title of the Sausage Capital of Texas because of its historic, century-old tradition of crafting distinct all-beef "hot gut" sausage, cemented by a 1995 resolution by the Texas House of Representatives.
