Durian: Beyond the Fruit — Discover Thai Durian Delights 💛
Bold, creamy and unmistakably tropical, durian is one of Thailand’s most distinctive fruits.
In Thai food culture, it is enjoyed not only fresh, but also paired with sticky rice, slowly cooked into preserves, simmered in syrup, folded into desserts and transformed into crisp snacks.
Join us to discover how Thailand takes durian beyond the fruit.

Thai cooks use both ripe and firm, underripe durian, depending on the preparation.
Ripe flesh works well with coconut milk and sticky rice or can be slowly cooked into a concentrated paste. Firmer, underripe durian is better suited to simmering and frying, where it can retain its shape.
1. Khao Niao Durian — Durian Sticky Rice 🥥🍚
This classic Thai dessert combines durian, sticky rice and coconut milk.
Sweet coconut sticky rice is served with ripe durian and a fragrant coconut sauce. The creamy fruit contrasts with the chewy rice, while coconut milk balances the durian’s rich and distinctive flavour.
2. Durian Kuan — Durian Preserve 💛
Durian Kuan is made by slowly cooking durian flesh, traditionally with sugar, until much of its moisture evaporates.
As it cooks, the fruit develops into a dense, glossy paste with a soft, chewy texture and an intensely concentrated flavour. Its distinctive consistency comes from gradually reducing the moisture in the fruit through prolonged cooking.
3. Durian Chueam — Durian in Syrup 🍯
For Durian Chueam, firm, underripe durian—often varieties such as Mon Thong, is slowly simmered in sugar syrup until tender and sweet while still holding its shape.
This dessert showcases the Thai technique known as chueam, in which fruits are gently cooked in sugar syrup.
4. Khanom Mo Kaeng Durian — Thai Custard with Durian 🥧
Khanom Mo Kaeng is a rich Thai baked custard traditionally made with coconut milk, eggs and palm sugar.
In this durian variation, ripe fruit is incorporated into the custard mixture, adding richness and a distinctive fruity aroma. Crisp fried shallots scattered on top provide a lightly savoury contrast to the sweet custard.
5. Khao Tom Mud Durian — Steamed Coconut Sticky Rice with Durian 🍚🌿
Khao Tom Mud Durian combines sticky rice, coconut milk and ripe durian in a soft, chewy dessert traditionally wrapped and steamed.
Depending on the recipe, the durian may be incorporated into the rice or used as a filling. During steaming, its aroma and flavour blend with the coconut sticky rice, creating a rich yet gently fruity dessert.
6. Alua Durian — A Traditional Sweet with a Modern Twist 🌼
Alua is a classic Thai sweet with decorative shapes, a lightly dried exterior and a softer centre.
The durian variation adds the fruit’s creamy aroma and flavour. Some versions are shaped or coloured to resemble durian, making the sweet both playful and distinctive.
7. Durian Thot — Crispy Durian Chips 💛✨
For Durian Thot, firm durian is thinly sliced and fried until crisp. Commercial versions may use vacuum frying at lower temperatures, which allows the fruit to be fried at lower temperatures, helping to reduce browning while retaining its natural colour and flavour.
Because the fruit is used before it becomes fully ripe, the flavour is generally milder and less pungent than fresh durian. The result is a crunchy snack with a subtle sweet-savoury character.
8. Freeze-Dried Durian ❄️
Freeze-dried durian is made from ripe fruit that is frozen and dried under low pressure.
The process removes moisture while largely preserving the fruit’s structure, creating a light, airy and crisp texture. Its distinctive aroma and flavour remain recognisably durian, but in a completely different texture from fresh fruit or fried chips.
