Another day of entomophagy! Hoopeston Area School District students learned that over half of a cavemans' diet consisted of insects. They also consumed roots, tubers, nuts, fruits, grains, eggs, berries, and the meat left on a carcass after a carnivorous animal had finished. Once the caveman learned how to hunt, they became hunters AND gatherers.

The students at Northeast Elementary Magnet School - Danville, Illinois recently tasted crickets with AITC. When many of us see a cricket, we instantly think of the constant chirping. Maybe the cricket is seen as a sweet reminder of summer.... or, it might be an annoying pest. But for many parts of the world, crickets are a major food source, providing protein which help with brain function and help fuel our muscles.

Today's lesson took us to Armstrong Ellis Grade School for a lesson on entomophagy!

Many cultures eat insects as part of their diet because of the availability of insects and the scarcity of beef, pork, and chicken.
