For California garlic to properly cure at the start of harvest, we make sure to lay out our crop into “windrows.” During this time of year, the California sun gives us the ability to get our garlic ready for packaging and storage, and there’s no better place than in the field to get the job done.

For our California garlic harvest, we use large wooden bins that each contain 2,000 pounds of product. These bins are stored both in dry conditions for immediate production use or inventoried into long-term storage to meet future sales.
