🔴 COOK foods to a safe temperature.
🔵 CHILL perishable food in the fridge or a cooler until ready to use.

May is Asian American and Pacific Islander Heritage Month.

This month honors the histories, cultures, and contributions of Asian Americans, Native Hawaiians, and Pacific Islanders in the United States. Traditional dishes and ingredients from these cultures reflect their diversity of foods and cooking practices.

These four recipes are inspired by a variety of Asian and Pacific Island cuisines:
🟢 Eggplant with Basil
🟢 Beets with Mustard Seeds
🟢 Taiwanese Cabbage with Chili and Garlic Sauce
🟢 Shobi Bhaji Potatoes

These recipes use fresh produce and herbs to bring bold flavor to each dish. Try one that is new for you.

Braising greens include dark greens such as collards, kale, Swiss
chard, mustard greens, turnip greens and beet greens. These dark leafy greens add color, flavor, and texture to a dish. They are also high in iron, which helps transport oxygen through the bloodstream, allowing the body to produce energy.

Try these recipes for Collard Greens With Spicy Peanut Sauce or Braised Collard Greens. Remember to rinse well and trim leaves from stem before cooking!

What you eat can support both your health and the health of our planet. Replacing animal protein — especially red meat — with plant proteins like beans, lentils, tofu, nuts, and seeds can help our planet’s health by reducing greenhouse gas emissions and can improve your overall health.

The NYC Food Standards is doing this too! The Standards set nutrition guidelines for meals and snacks served in city agencies, such as public schools, older adult centers, child care centers, correctional facilities, public hospitals, and more. They recognize the importance of promoting individual, community and planetary health and promote an economically and environmentally sustainable food system.

The Standards requires minimum servings of plant proteins, limit servings of red meat, and require no processed meat is served. By following the Standards, City agencies help reduce greenhouse gas emissions and increase access to healthy meals.
