😓 When farmers have a tough year, the hardware store and the diner in town feel it too. Agriculture makes up 10.9% of Arkansas' GDP, the highest share in the South and more than double the national average! 🌾🏦
That's good news for our communities, but it also means a bad year for broilers, cattle, cotton or soybeans can be felt on Main Street. Frank Seo of the Division of Agriculture and Chrystol Thomas of Texas A&M looked at what helps rural towns stay resilient. Small local businesses, regional partnerships and value-added products all play a part. 💪

Plan ahead dinners for busy nights by doubling your recipe and freezing half for another meal!
Doubling a recipe can be a great way to save time and prepare extra meals, but a few simple tips can help your results turn out just right. From using a larger pot and allowing proper oven airflow to checking food temperatures and labeling freezer meals, a little planning goes a long way!
-trust your basic math: most ingredients can be simple multiplied by 2. Be more conservative with seasonings and multiply by 1.5.
-rely on the thermometer instead of time: use a food thermometer to ensure the recipe is cooked to the proper temperature.
-upgrade to a larger pot: allow plenty of room for the extra ingredients.
-choose oven placement wisely: allow space between pans and the oven walls to allow for adequate air flow.
-cool foods before freezing: allow foods to cool in the refrigerator before packaging for freezer storage.
- store and label: freeze foods in freezer safe containers and label with the name and packaging date.

Cooking for a crowd or planning ahead? Double the recipe with confidence!

Today is National Taco Day!
American's eat more than 4.5 billion tacos each year. Let's up the healthy factor of the classic taco with a nutritious Taco Salad! Get the recipe: https://www.uaex.uada.edu/life-skills-wellness/food-nutrition/eating-well/arkansas-foods-blog/posts/taco-salad.aspx
The story of the taco is deeply woven into the history of Mexico. Anthropological evidence shows Indigenous people living in the lake region of the Valley of Mexico filled fresh, soft corn tortillas with small fish. The first documented "taco feast" for Europeans was arranged by the Spanish conquistador Hernán Cortés. Chronicler Bernal Díaz del Castillo described the meal, served on corn tortillas, that Cortés hosted for his captains in Coyoacán.
The modern word "taco" is believed to have originated in the 18th-century silver mines of Mexico. Miners used charges of gunpowder wrapped in paper, which they called "tacos." Their lunchtime staple—tortillas wrapped around a spicy filling—looked strikingly similar to these dynamite sticks, and the name stuck.
Tacos were introduced to the United States by Mexican migrants in the early 20th century, with street vendors and taquerias popping up in cities across the Southwest. However, it was the invention of the pre-formed, hard-shell taco that helped launch the food into mainstream American culture.
