This Watermelon, Feta and Mint Salad is pure summer in a bowl. π
Light, refreshing, and packed with hydration, it is an ideal recipe for older adults who want to stay nourished and cool on warm days, with anti-inflammatory ingredients that support overall wellbeing.
Ingredients
πΏ 4 cups cubed seedless watermelon
πΏ 1/2 cup crumbled feta cheese
πΏ 1/4 cup fresh mint leaves, roughly torn
πΏ 1/2 cucumber, thinly sliced
πΏ Juice of 1 lime
πΏ 1 tablespoon olive oil
πΏ A small pinch of sea salt
πΏ Optional: a light pinch of chilli flakes for a gentle kick
Instructions
