Smells like Christmas in the brewhouse! All the different ways we infuse the wonderfully fresh cut Fir tree in this years Winter Tree IPA. Piney, resinous, citrus, and woodsy goodness. •Cutting the luge and expressing the sap pockets in the tree is just the beginning fun part. We then rinse and torch the tree to caramelize some of the sap and add some more distinct wood flavor to the brew. •Midway through the boil we rush the hot wort down the luge into a kettle filled with the branches. We do that run 4times filling up the smaller kettle and changing out the limbs every time so that they get fresh infusions every time we restart the flow down the luge. •We are also dunking limbs in the main kettle as we get temperatures back up to boil to continue the brew process. We continue boiling so that it gets rid of all wild yeasts from this brew .
