Have photos or stories about Seal Rock Springs Farm or the bottling company? Follow and share! Seal Rock Spring (and the associated farm/bottling property) has a long history in S**o, Maine, evolving from a natural landmark into a prominent regional beverage business. The spring itself is one of S**o's historic natural features, protected by the City of S**o. Before the industrial era, the area around the spring was known to indigenous peoples and early settlers for its pure water. In the late 1800s it's water graced the tables of fine hotels in Boston and New York. In the early 20th century, the water was officially recognized for its purity. From 1919 until 1977 it was used by the Seal Rock Spring Bottling Company to mix Orange-Crush, Moxie, Rootbeer, Ginger Ale, and other popular flavors with it's Maine state-certified spring water .

Spent two glorious fall days with my nemesis, the multiflora rose, ripping it out by the roots and away from the berry patch, preparing for the snow and the future growing season. While not as pernicious as the bittersweet, which can warp and devour 30 foot trees, it is just as beautiful in the fall with its glossy little rosehips, and just as invasive. We've learned to not be taken in by that beauty, and taming it will be an ongoing chore.

The Evolution of A Crabapple

Remember all those blossoms last spring? Well, most of those yielded runty crabapples - although the wildlife certainly aren't complaining. But a couple of trees grew larger, gumball-sized fruit!

Decided to find out if these could be at all useful to humans, and was delighted to find that the alchemy of water, fire, and sugar turned extremely tart, and somewhat astringent, crabapple juice into jars of rosey-hued sweet-tart jelly goodness.

Everybody wins!

Clearly Nature had a mind of her own because we woke up to two more windfalls and decided to pick the remaining 4 1/2 apples. Not mad about it, though, because they were ready just in time to celebrate David's birthday with some apple crisp! (Used Mom's recipe ❤️) A delicious finale to our first little harvest. Can't wait to see how next season grows!

With only 2 weeks left of summer we had a windfall, so we decided to try our first taste. Where we are in Zone 6a, Liberty apples typically don't ripen until mid-September through early October. The verdict? Sweet and tart! Seemed ripe to us. Is climate change moving the picking calendar forward? We'll wait a few weeks before harvesting the remaining 8 or so, unless nature has other ideas...

Dennis found this last spring behind the old bottling building (barn) and took it home to research. He returned it today with the verdict: 1798 or 1799 "Draped Bust" American One Cent! It predates the house by over a quarter of a century. Who dropped it? What were they doing back there?

Transplanted these sunflowers along the "barnage" early in the season from seedlings that had started beneath the bird feeders, not knowing that the chipmunks had already stashed some seeds in the mint nursery. Soon we'll plant the catmint, peppermint, and chocolate mint near the berry patch as a deer deterrent.

Planted Spring 2025, this Liberty semi-dwarf apple tree is already fruiting! We pulled most of the tiny apples off earlier in the summer so that it could focus on growing healthy roots, but kept a few on for fun. Can't wait to taste them, and hoping for a plentiful harvest in Fall 2027!
