Dry-Aged NY Strip, Golden Beet Terrine, Ginger, Juniper.
•🐄: got us half a cow from , we broke it down and used every bit of it, aging the striploin for 30+ days. Beef garum seasons every part of the dish. Beef+beet jus bridges the steak and the set. Terrine seared in beef tallow.
•🍠: golden beet pavé layered with butter/shio koji/garum, gel of beet juice/ginger/juniper, dehydrated chewy beets dressed in juniper vinegar, finished with beet chips+powder

Heather- On behalf of the entire Husk Savannah and The Neighborhood Dining Group team, it has been an honor to have you lead over the last 4+ years. You have been the captain steering the restaurant and team past some rough early days, through the many emotions of the pandemic, and finally to where we stand today. Through it all, you have consistently led with grace, compassion, and strength. Today, your last service, we are proud to exclaim that Husk Savannah is stronger than it’s ever been, and in many regards, that’s because of you.
We look forward to celebrating your accomplishments and continuing to drive the restaurant forward from the foundation you have built and the indelible mark you are leaving on Husk. You have played a pivotal role in sewing Husk into the fabric of the Savannah food and beverage scene and helped us achieve our mission of celebrating southern ingredients and supporting the many local farmers and purveyors in and around the Savannah community.
We wish you, Jason and baby Gia the best on your move to Florida and hope you can cherish more time with family and explore new adventures in life.
