Southampton High School senior Jan Gredysa gained firsthand insight into the medical field this summer when he traveled to Tanzania with his father, a physician, as part of a 15-day medical mission with Operation International.

Gredysa, who has an interest in pursuing a career in medicine, was eager to participate after reflecting on his father’s previous experiences with the organization. He thought the trip would provide a perfect opportunity to work with his father while serving communities in need.

During the trip, Gredysa worked alongside medical professionals and translators, assisting with paperwork, organizing and setting up medical supplies and supporting the team’s efforts in the field. He also observed surgical procedures up close, gaining a firsthand look at the realities of working in medicine.

One of his biggest takeaways, he said, was witnessing the importance of teamwork in providing patient care. He observed how doctors, nurses and other medical professionals work closely together and rely on one another, particularly during emergencies. He said he was astounded by the way medical professionals use their training to remain calm, focused and disciplined under pressure.

The experience further strengthened Gredysa’s interest in medicine. He plans to study biochemistry on a pre-med track in college.

At school, Gredysa serves as an ex officio member of the Southampton Board of Education, is a member of his school’s Varsity, Fishing and Outing Clubs and is a competitive swimmer. He swims as part of the joint Southampton and East Hampton varsity swim team that he helped launch, and in club swimming. He is also a record-holding angler with 28 world records from the International Game Fish Association.

The Southampton Intermediate School National Junior Honor Society participated in the Making Strides Against Breast Cancer Walk on Oct. 3. They joined hundreds of community members in raising awareness and funds for breast cancer research, education and support.
Wearing pink to support the cause, the NJHS students, along with faculty advisers Kristen Minter and Mei-Lynn Guerrero, walked with pride to honor those lost and stand united in the fight to end breast cancer.
The event, hosted by the American Cancer Society, took place at Grangebel Park in Riverhead and served as a powerful reminder of the importance of community involvement and compassion.
“This event gave our students a meaningful opportunity to make a difference beyond the classroom,” said Minter. “It was about more than service hours — it was about empathy, awareness and the power of collective action.”
During the month of October, NJHS members are also organizing fundraising efforts at their school to contribute to the American Cancer Society's mission.

A new addition to Southampton Intermediate School, The Little Free Bakery, is giving students the ability to combine their growing culinary skills with lessons in agricultural literacy, entrepreneurship and the importance of supporting local farms.
Located near the school’s security desk, the Little Free Bakery features delicious samples prepared by students in the school’s new baking class using locally sourced and New York State agricultural ingredients. Staff members and visitors are invited to enjoy the treats, giving the 19 students in the class an opportunity to share their hard work.
The new baking class builds on the foundational skills that the students developed through the school’s home and careers program. Students explore baking techniques and learn how agricultural products are transformed into the ingredients used in everyday foods. They learn how to research agricultural commodities, develop recipes, calculate costs, design packaging and market their finished products.
Local agriculture is central to the program. By incorporating ingredients grown and produced on Long Island and throughout New York State, students learn about seasonality, agricultural production and the importance of regional farms and producers.
“The project reinforces the idea that agriculture extends far beyond the farm and is part of our everyday lives,” said family and consumer sciences teacher Christina Cassel Duryea.
With fall in the air, students recently baked pumpkin muffins made with Long Island cheese pumpkins, which students roasted and pureed from scratch. They also made honey cornbread featuring local popcorn kernels that they milled into cornmeal.
Students are also exploring the versatility of apples through a project that included a field trip to The Milk Pail in Water Mill to pick apples. They used the apples to make fresh-pressed c***r, which they also incorporated into homemade apple c***r donuts.
As the class progresses, students will be introduced to breads featuring additional New York agricultural commodities, including potatoes, oats and maple syrup, along with homemade butter.
