What’s green, packed with vitamins, and has been taking over classrooms this month? Zucchini!

First and second graders in the Waterloo Community School District have been getting a taste of this summer squash while learning how it helps keep our bodies healthy. Zucchini contains vitamin A, which supports healthy eyes, and vitamin C, which helps our bodies fight off illness.

Students have also been learning about what to do when they have more zucchini than they can use. They've worked together to talk through ways to use extra zucchini instead of throwing it away. Those ideas have included making zucchini bread or noodles (zoodles), cutting and freezing zucchini for later, and sharing extra zucchini with friends, neighbors, or local food pantries.

Follow along to learn more about our produce of the month and fun ways to stay active this fall.

Be aware if you find a bat indoors. A bat bite can be so small that it may be undetectable. If you don’t know if the bat touched you, your family, or your pet, then you are considered potentially exposed to rabies.
