πŸ‘» Spooky Season Spinach Artichoke Dip with Ghost Chips πŸŽƒ

Give a classic a fun, spooky twist! This creamy, cheesy dip is served with crispy ghost-shaped chips that are guaranteed to be spooktacular! Courtesy of sundaytable.co πŸ’š

πŸ₯£ Dip
1 Tbsp olive or avocado oil
4 oz fresh spinach, roughly chopped
2 large garlic cloves, finely minced
4 large fresh artichokes (about 1Β½ cups cooked, chopped hearts)**
1 cup freshly shredded parmesan
1 cup mayonnaise
Black pepper, to taste

πŸ‘» Ghost Chips
8 flour or corn tortillas
2 Tbsp olive or avocado oil
Kosher salt, to taste

Directions:
1️⃣ Prep the artichokes: trim the stems and tough outer leaves, then steam or boil for 25-35 minutes until tender. Let cool, scoop out the fuzzy choke, pat the hearts dry, and roughly chop.**

2️⃣ Preheat oven to 375Β°F and grease a small baking dish.

3️⃣ Heat oil in a skillet over medium. Add spinach and a pinch of salt, and cook until wilted. Press out as much water as you can using a fine-mesh sieve or cheesecloth.

4️⃣ Mix the spinach, chopped artichoke hearts, mayo, parmesan, garlic, and pepper in a bowl until combined.

5️⃣ Spoon into the baking dish, smooth the top, and bake 20-25 minutes until bubbly and golden.

6️⃣ For the chips, cut ghost shapes from the tortillas with a pizza cutter or knife. Tip: cut random shapes to reduce waste, using any pointed bits as the ghost’s tail. Round off sharp points.

7️⃣ Use a reusable straw or small piping tip to punch out eyes and mouths. Place on 2 sheet pans, brush both sides with oil, and sprinkle with salt.

8️⃣ Bake 6-7 minutes, flipping halfway, until light golden and starting to crisp. They’ll crisp up more as they cool!

9️⃣ Serve the ghost chips with the hot dip. πŸŽƒ

Before artichokes were a Castroville tradition, they were a Prohibition-era power play.

Ciro "The Artichoke King"Terranova monopolized NYC’s artichoke market in the 1920s, raising prices and earning around $1 million a year. Judy Burditt of the Castroville Artichoke Advisory Board tells the story in our new video. Watch to find out how the thistle got tangled up with the mob.

From the Archives... πŸ“‚

In 1985, Castroville gathered for the 26th Artichoke Festival, September 21 & 22. Chairman Frank Gomes Jr. called it β€œthe start of our Golden Years.”

Swipe through to see pieces from our files:
Slide 1: Our festival mascot, waving hello beneath the sign that says it all: β€œCastroville: The Artichoke Center of the World.”
Slide 2: The Chairman’s Message. The festival had grown so much it moved into the Baseball Park, and the money raised went right back to local youth through academic and sporting endeavors. πŸ’›
Slide 3: The History of Castroville, a town founded in 1863 and built by neighbors, businesses, and railroad crews.

The artichoke is more than a crop here. It’s what brings Castroville together. Generations of growers, families, volunteers, and festival-goers have rallied around it, and it has funded scholarships, sports, and community pride along the way. Decades later, it’s still the heart of this town's rich history.πŸ’š

TRY THIS RECIPE: Artichokes Constantinople
Courtesy of Ocean Mist Farms

If you're looking for something to satisfy that soup craving as we transition into Fall, check out this recipe from our very own, Ocean Mist Farms! Artichokes Constantinople, a delicious traditional greek recipe that'll keep you wanting more!

πŸ‹ Ingredients:
4 Ocean Mist Farms Artichokes
1 lemon, cut in half
1 small onion, finely diced
3 cloves of garlic, finely minced
3 large carrots, thinly sliced
4 green onion, thinly sliced
8 baby potatoes, cut into bite sized pieces
4 cups of veggie broth or stock
Salt and pepper to taste
1 teaspoon of cornstarch
1 cup of frozen peas
1/2 cup of dill, finely chopped
1/2 cup of parsley, finely chopped
1 lemon, juiced

πŸ“‹ Directions:
Prep the artichokes. Start by rinsing and slightly scrubbing the natural film off of artichokes. Cut the top Β½ of the artichoke and a dime-sized piece of the tail off and peel the stems. Peel off about half of the outer leaves, snipping the tip of each remaining leaf with kitchen scissors. Rub the entire artichoke with the lemon to help prevent browning and spread petals. Finally, use a spoon to remove the fuzzy choke in the center of the artichoke.

In a large pot, heat the olive over medium heat and add in the onion. SautΓ© until translucent, about 6 minutes. Add in the garlic and sautΓ© for 2 additional minutes. Mix in the carrots and green onions and sautΓ© for 3 more minutes. Finally, mix in the baby potatoes.

Add the artichokes to the pot along with the broth, salt and pepper. Bring to a gentle simmer, cover the pot, and cook for 45 minutes or until the stems of the artichokes are easily pierced with a fork.

Scoop out about Β½ cup of the broth and whisk it together with the cornstarch. Add back to the pot and stir to combine.

Mix in the peas, dill and parsley as well as the lemon juice and cook over low for 2 additional minutes.

Serve immediately with fresh herbs and ENJOY! Any remaining leaves will fall off of the artichoke and some like to eat the flesh off of them before discarding the rest. Alternatively, you can discard those before serving.

Did you know a single well-cared for California Artichoke plant can produce up to 40 to 50 buds? 🌿 And once it's established, that same plant will keep producing healthy crops for four to seven years.
That's a whole lot of artichokes from one plant! The farmers of California have known this for generations and work hard every year to protect these great crops!
